TheFlow, who brought us the previous cfw exploits for the Vita has just released the most recent (and probably final) 'jailbreak', which works with the current 3.70 firmware that was previously unexploitable, under the name Trinity.
If you're on 3.65-3.68 it's advisable to use the previous H-encore exploit, and the original Henkaku for 3.60 and below.

I'll just post the full piece from TheFlow's GitHub:

Hate to reply to my own OP, but I just wanted to comment now that I've tried the new exploit...
It worked like a charm on my PSTV, which I then downgraded to 3.60 firmware (using the Modoru homebrew app), and then installed henkaku enso for coldboot cfw.
So now both my PSTV and OLED Vita 1000 are on 3.60 henkaku enso (spoofing 3.70 fw), and utilising the reF00D plug-in to get around titles requiring firmware higher than 3.60 to run.

I highly recommend this guide for anyone wanting to hack their Vita (all firmwares/exploit variations are detailed) - https://vita.hacks.guide/
